 Vegan Chocolate Brownie Recipe

 

There are loads of good recipes out there for brownies. You might have your own version or a favourite you've picked up along the way. Whatever it is there are some generally accepted ingredients as to what makes a good vegan chocolate brownie recipe.

INGREDIENTS

 

5 Table spoons of Sunflower oil + extra for greasing
200g Vegan Dark Chocolate
170g Self Raising Flour
3 Heaped teaspoons of Cocoa Powder
180g Golden Caster Sugar
Sea Salt
1 Vanilla Pod
230ml Unsweetened Organic Soya
200g Pecan Nuts

 

METHOD

 1. Preheat oven to 180C/350F/Gas mark 4. Grease a 20 cm square tin and line with grease proof paper.

 

2. Melt the chocolate in a bowl over a simmering pan of water (don't let the bowl touch the water).Break up 150g of the chocolate and melt. Set it aside to cool slightly.

 

3. Sieve the flour and cocoa powder into a larger bowl then stir in the sugar and add a pinch of salt. Halve the vanilla pod then scrape the seeds into the mix. Stir in the oil, milk and melted chocolate until combined.

 

4. Roughly chop and stir in the remaining chocolate and most of the Pecans. Pour into the tin and spread evenly. Top with the remaining Pecans then cook for 20 - 25 minutes until cooked on the outside but still gooey on the inside . Cool for 5 minutes then turn onto a wire rack.

 

5. Serve whilst still warm with a scoop of ice cream.
